Zucchini Boats

A Durbin family classic

By popular demand, the zucchini boat recipe is here! 

Serves: 2
Total Cooking Time: 25 minutes

What You'll Need:

  • 2 small-medium zucchini
  • 1 cup marinara sauce 
  • 2 cloves garlic, minced 
  • 2 tbsp olive oil
  • 3/4 c shredded mozzarella 
  • Salt and pepper to taste
  • Optional: 1/2 pound ground beef or turkey


  • Cut zucchini in half, length-wise
  • Scoop out inside of zucchini (option: reserve the insides to sauté with olive oil and garlic in replacement of meat for a vegetarian option)
  • Brush zucchini with olive oil and fresh garlic. Bake on cookie sheet or in a shallow casserole pan at 350 for 15 minutes
  • Heat olive oil in a pan, sauté ground beef or turkey (or substitute meat for the zucchini you saved in step 2). Add marinara sauce 
  • Remove zucchini from oven and stuff with prepared sauce. Top with shredded mozzarella cheese and salt/pepper to taste
  • Bake for 10 minutes (or until cheese is melted)

Best served with a side of angel hair or penne pasta
