Chicken Spinach Veggie Salad with Lemon-Garlic Dressing

RECIPE

To prepare the chicken:

  • Place chicken breasts into a plastic bag and pour Gazebo Room Greek Dressing/Marinade (or marinade of your choice) into the bag until chicken breasts are completely covered
  • Let marinate for 60 minutes in the fridge
  • Remove from fridge and let sit for 30 minutes at room temperature 
  • Place on grill at high-heat for about 7-8 minutes each side, until center is no longer pink

To prepare the dressing:

  • Put 1/4 cup olive oil, juice of 1/2 lemon, and 1 large clove of garlic into blender
  • Blend until smooth
  • Place in fridge for 30 minutes

To prepare the salad:

  • Place fresh spinach, diced bell pepper, 1 kumato tomato, 1/2 avocado, and chicken breast into a bowl
  • Add feta and sliced almonds
  • Top with dressing
  • Serve and enjoy!
