Ground Turkey Taco Bowls

Quick & easy lunch recipe


  • 3/4 lb. lean ground turkey
  • 12 oz. can of corn (drained and rinsed)
  • 1 cup black beans
  • 1 pint cherry tomatoes
  • 1 lime
  • 1/4 cup diced red onion
  • 1 cup brown rice (dry)
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp basil 
  • Dash of salt and pepper


  • Cook brown rice according to package directions, adding lime zest and a dash of salt to the cooking water
  • Cook turkey over medium heat, tossing in the chili powder, cumin, basil, salt and pepper as you cook
  • Break up the meat and mix with seasoning for 10 minutes or so, until cooked through 
  • For salsa - dice 1 pint tomatoes and mix in a bowl with 1/4 c minced red onion, juice from 1/2 lime, and 1/4 tsp salt 
  • Assemble the bowls with roughly 1/4 portion of brown rice, 1/2 c corn, 1/2 c cooked turkey, 1/4 portion salsa, 1/4 c black beans (should yield about 4 servings, more or less)
  • Add some shredded cheese on top if you're feeling feisty!!!
