Spinach Salmon Salad

Recipe

  • Season 6 oz salmon filet with 1 TB olive oil, basil, salt and pepper 
  • Bake salmon for about 25 minutes at 375 degrees
  • Prepare sweet potato with 1 TB olive oil, salt and pepper
  • Roast sweet potato for about 30 minutes at 350 degrees
  • Compile other ingredients: fresh spinach, 1 hard boiled egg, roasted pumpkin seeds & feta cheese
  • Top salad with baked salmon and roasted sweet potato
  • Drizzle with balsalmic vinagrette
